🥗 Power Bean Salad Recipe

Serves 2–3 | Vegan | Meal-prep friendly

Ingredients:

  • 1 can chickpeas, drained and rinsed

  • 1 can kidney beans or black beans, drained and rinsed

  • 1/2 red onion, finely chopped

  • 1 red bell pepper, diced

  • 1 handful cherry tomatoes, halved

  • 1 small cucumber, chopped

  • 1 handful fresh parsley or coriander, chopped

  • Optional: 1 avocado, cubed or 2 tbsp feta (if not vegan)

 


 

Zesty Dressing:

  • 2 tbsp olive oil

  • Juice of 1 lemon or lime

  • 1 tsp Dijon mustard

  • 1 garlic clove, minced

  • 1/2 tsp ground cumin

  • Salt & pepper to taste

 


 

Instructions:

  1. Combine all salad ingredients in a large bowl.

  2. Whisk dressing ingredients in a separate bowl or shake in a jar.

  3. Pour dressing over the salad and toss until everything’s coated.

  4. Let it sit for 10–15 minutes so the flavours can vibe.

  5. Serve chilled or at room temp — perfect with warm pitta, quinoa or on its own.

 


 

💡 Customise it:

  • Add sweetcorn or edamame for extra colour

  • Top with toasted seeds or nuts for crunch

  • Mix in greens like rocket or spinach for volume

  • Want spice? Add a chopped chilli or sprinkle of paprika
