Our mood and the food we eat are intricately connected, and the choices we make in our diet can have a significant impact on our emotional well-being.

So, why is this recipe mood-boosting?
Well, for starters, eggs provide a rich supply of protein, vitamin D, and B12. Additionally, they include choline, a nutrient that aids the nervous system and contributes to the production of mood-regulating brain chemicals.
Avocados serve as a nutritious source of fat and also offer vitamin B5, which supports the adrenal glands responsible for stress hormone production.
Black beans are rich in the amino acid tryptophan and the mineral magnesium, both of which have been linked to benefits in mood and mental well-being. Chillies can also make our bodies release endorphins, in a similar way to a runner’s high!

Method:
In a generously sized non-stick frying pan, heat the oil until it simmers. Add the sliced chilli and garlic, cooking until tender and exhibit a hint of colour. Crack the eggs onto either side of the pan, allowing them to set gradually.
As the eggs firm up, gently ladle the black beans (alongside their juices) and the cherry tomatoes around the pan. Sprinkle cumin seeds over the mixture, then gently warm the beans and tomatoes over the heat.
Once the ingredients are warmed, remove the pan from the heat and distribute your slices of creamy avocado and freshly chopped coriander. Squeeze the juice from half of the lime wedges over the dish. You can then place the remaining lime wedges on the side, along with some extra slices of chillies, if you want the extra endorphin boost!
