These pancakes are fluffy, satisfying and packed with ingredients that support energy, gut health and satiety. Perfect for Pancake Day and ideal as a regular breakfast if you ever fancy something sweeter for breakfasts!
🌾 Ingredients (Serves 1–2)
- 2 large eggs
- 120g cottage cheese or Greek yoghurt (both high protein)
- 50g oats (or oat flour)
- 1 tbsp chia seeds or ground flaxseed
- ½ tsp baking powder
- 1 tsp vanilla extract
- ½ tsp cinnamon
- Pinch of salt
- Optional sweetness: 1 mashed banana or 1 tbsp honey
- A splash of milk to adjust thickness if needed

- Blend all the ingredients (except milk) until smooth and thick.
- If the batter feels too thick, add a splash of milk to thin it slightly.
